Salmon Salad

love this salad! It’s one of my very favorite foods to whip up for lunch. It’s quick (requires no cooking), super healthy, and so delicious. Plus, it’s very easily customizable to whatever produce you have on hand. This is just what I put in mine.

Serves 1

  • 1/2 can of wild salmon (3 oz.)
  • 1-2 tbsp. Greek yogurt
  • 1/2 apple, diced
  • 1/4 cup carrot, chopped
  • 2 tbsp. zucchini, chopped
  • 2 tbsp. red onion, diced
  • paprika
  • salt

Combine all ingredients, and season to taste. Again, feel free to sub in spinach, squash, mushrooms, celery; whatever you’d like. Dried cranberries also work very well in this dish. It’s good in a whole wheat wrap, on an English muffin, or with whole wheat crackers.

    I love canned salmon so much better than tuna. less mercury and better taste!
