I bought a package of tofu last week at the store, and then I forgot about it until I looked in the fridge wondering what to make for lunch!
I only started making tofu a couple months ago, but it’s really easy! I open the package, drain the water, and cut the tofu into slabs (or I cube it, depending on what I’m making). Today I sliced the tofu into five parts and pressed the slices between paper towels (with a couple heavy cookbooks on top) for about 10-15 minutes. Pressing the tofu helps ensure that you’ll get a firm, chewy texture (instead of spongy).
I grilled all the tofu slabs, along with some zucchini slices and mushrooms. When they were done, I packed four of the slices away for leftovers and diced up one of the slices. I combined the tofu cubes into a bowl along with the zucchini, mushrooms, 1/2 a cup of brown rice that I had leftover, and a tablespoon of hummus.
For the produce on the side, I had some cherries (love cherries in the summer), apple slices, and baby carrots with more hummus.
Awesome, awesome lunch. And since I have tofu leftovers, whatever will I come up with for tomorrow…
